The management of by-products of animal origin not intended for human consumption (Sandach), from the moment they are generated until their final use, recovery or destruction, is regulated to avoid risks to human, animal or environmental health. In the management of Sandach, categorization is key to know their possibilities of valorization. Currently, both the sector and the administration are raising awareness of the risks throughout the food chain and promoting the use of UNE standards of good practice on board. Today, the implementation of technologies for the elimination of the parasite on board, by means of inerting equipment, allows the viscera to be returned to the sea, in theory with the guarantee of not impacting the marine environment and its ecosystem, although it still does not guarantee 100% the complete elimination of the parasite in a way that does not involve food risk. <\/p>\n

In this sense, there are previous projects in which this problem has been contemplated, such as the Parasite<\/em> project of the European Commission (EC) on the impact of the correct management of viscera on board ships. On land, there are also technological projects such as Scanisakis<\/em>, a high-resolution scanner for an establishment to determine the degree of infection of fish samples. <\/p>\n

For the analysis of the viscera, carried out by ANFACO, samples were collected from the catches of four vessels that fish in the waters of Gran Sol and on the coast. The project’s actions also included specialised training for fishing vessel crew members in the handling, transport and processing of fish and in the control of parasites in fishery products. <\/p>\n
