Currently, there are no technological alternatives to address the presence of heavy metals in fishery by-products, which are often eliminated through slow and costly processes. This need gives rise to the EliMet project, which aims to develop technologies for the elimination of heavy metals in by-products that are often compromised by non-compliance with regulations and because they could pose a risk to public health, despite their high content of valuable nutrients for food. <\/p>\n

During the execution of the project, ANFACO-CECOPESCA carried out the identification of the key points in the chain of generation and reuse of fishery by-products and will assess the application of extraction techniques with subcritical water and other strategies, such as the use of chelators to eliminate heavy metals. For this purpose, it has the experience of the Technological Center for Research and Development of Functional Food, CIDAF, located in Granada, which intervenes as a partner in the project. <\/p>\n

The project is aimed at improving the management of by-products generated by the fishing industry, developing applicable alternative processes, which allow the revaluation of certain raw materials with a high content of heavy metals, which otherwise must be destroyed because they are considered a polluting waste and exceed the legislated limits. The aim is to support those sectors that promote the sustainability of fishery resources, taking advantage of the by-products derived from the processing industry for the production of alternative products, which would have no commercial value without this industrial treatment. <\/p>\n

The results obtained have been provided to the fishing industries and to the different administrations responsible for monitoring the resources, with the aim of improving the use of fishery by-products and food security.<\/p>\n
