The aim is to revitalise and modernise the production of Segureño lamb, laying the foundations for the sustainability of its production and choosing the training of the people involved in the process as the main vehicle to achieve the objectives.

This initiative is aimed at farmers and workers in feedlots, slaughterhouses and cutting plants. It contemplates addressing the implementation of the Protected Geographical Indication “Cordero de las Sierra de Segura and La Sagra”.

The specific objective is:

• Improve control over the applicable environmental regulations and the degree of compliance with them in the production centres.
• To support the environmental awareness of a group that in many aspects lacks training and that we consider fundamental for the involvement of respect for the environment.
• To provide them with a modern management and traceability system that allows them to manage and put their product on the market and train them in the use of this new technology.
• To guarantee the consumer the quality, health and traceability of the product from the origin to the point of sale, which can be monitored through new communication technologies.
