GELFISHPRO is a project aimed at the sustainable recovery of discards and by-products generated by Galician artisanal fishing, through the development of new functional ingredients of marine origin for food. In continuity with GELFISH, the proposal expands the previous approach towards protein valorization, betting on obtaining functional protein hydrolysates and their incorporation into oleogel-type matrices with potential for application in the food industry.

The project is part of a biorefinery strategy adapted to the artisanal fishing environment, with the aim of improving the use of currently underused marine biomass, reducing waste and generating products with greater added value. In this way, GELFISHPRO contributes to promoting the circular economy, innovation and sustainability in the fishing and processing sector.

The participation of the Fishermen’s Guilds of Portosín, Riveira and Vigo reinforces the applied nature of the project and favours the connection between scientific-technical development and the real needs of the sector. Likewise, GELFISHPRO contributes to the progress towards more sustainable production models, aligned with the conservation of the marine environment and with the principles of the blue economy.

The general objective of GELFISHPRO, in continuity with the advances obtained in GELFISH, is to develop a comprehensive valorisation model of discards and by-products from Galician artisanal coastal fishing and its processing fabric, by obtaining functional protein hydrolysates for food and their incorporation into oleogel-type matrices, compatible with their use in the local canning and processing industry. With this, the project seeks to promote innovative solutions based on the circular economy, improve the use of marine resources and promote the environmental, economic and social sustainability of the artisanal fishing sector.

The project consists of the following specific objectives:

OE1. Identify, quantify and characterise the fish discards and by-products generated by the artisanal fleet and by the associated processing industry, evaluating their potential for recovery.
OE2. To produce fish protein hydrolysates on a pilot scale from different species and by-product fractions, optimising their performance and functionality for food applications.
OE3. To evaluate the bioactivity of the protein hydrolysates obtained, especially their antioxidant capacity, complementing it with a peptidome characterization aimed at the identification of biopeptides of interest.
OE4. Design and optimize encapsulation systems in gelled matrices and advanced oleogels that allow the bioactivity of protein hydrolysates to be preserved and facilitate their incorporation into processed foods.
OE5. Develop a biorefinery strategy adapted to the context of Galician artisanal fishing guilds, promoting comprehensive, efficient and sustainable management of by-products and fish discards.
OE6. To assess the technological, economic and environmental viability of the proposed value chain, in order to facilitate its transfer to the industrial fabric and its potential replicability in other coastal areas.
OE7. To promote the transfer of knowledge and the practical application of the results through the active participation of guilds, the processing industry and other agents in the fishing sector.
