The project aims to reverse the demographic trend in the towns affected by depopulation through the dynamization of productive activity based on native resources, the Pasiega gastronomic tradition and the commitment to quality in the restaurant.
The theme of the project is the economic reactivation and alternative development of the regions linked to economic activities of the primary sector in decline.
The demographic evolution, the high degree of dispersion of the population centres that make up the territory and the complementarity between the strategic sectors of the territory, point to intersectoral collaboration as a necessary way to revitalise economic development and boost the labour market. In order for cooperation to achieve tangible results that translate into sustainable growth for the productive fabric, it is necessary to formalise the symbiotic relationships that can be established in the territory and explore existing opportunities, since, given the average size of companies, it is difficult for them to establish contacts with all the private entities with which they can consolidate a complementary activity.
In this context, in order to advance in the culture of cooperation and consolidate the existing potentialities in the territory, it is necessary to have specialized external support whose function is to analyze opportunities, promote relationships and create the right conditions for relationships of trust to be generated. The purpose of intermediation must be to try to establish points of balance that represent competitive advantages for all the agents involved and to set the terms of the agreement that guarantees the stability of the defined business relationships.
During the participatory processes developed for the elaboration of the Participatory Local Development Strategy and the Action Plan of the Candidacy for Biosphere Reserve, the scarce presence of native production in local restoration, despite its quality, was identified as a limiting factor. In this context, the project includes the following lines of action:
Action 1. Course aimed at local restaurateurs on local production and Pasiega cuisine: a training action will be given through a mixed format (face-to-face and online) in order to transmit to kitchen professionals who carry out their professional work in Pasiego territory, in order to promote the inclusion in restaurant menus of proposals based on local production and/or traditional recipes.
Action 2. Advisory Plan in tutorial format, aimed at local producers focused on promoting the social economy and cooperative business culture, in order to facilitate and motivate intersectoral collaboration.
Action 3. Intersectoral intermediation programme aimed at facilitating cooperation between entrepreneurs from different sectors and the generation of trade agreements that promote concentric economic circles at the local level, thus favouring economic growth based on own resources and taking into account criteria of
Environmental sustainability, the generation of quality employment and the recovery of the traditional trades that have been a hallmark of the Pasiega Culture.
The percentage of participation of women in the project will be 60%, while the percentage of participation of other priority groups (sum of the rest of the groups except women) will be 50%.
